      短链脂肪酸(SCFAs)是指碳链长度在4~8的有机脂肪酸,也称为挥发性脂肪酸,在哺乳动物乳和胃肠道系统中含量较高。人类日常饮食的短链脂肪酸主要来自于牛羊乳。人乳中含有的短链脂肪酸可调节婴儿脂质代谢、降低肥胖风险,对于婴儿的生长发育具有重要作用。对人乳短链脂肪酸的组成、检测方法及其消化代谢进行综述,为人乳营养价值的研究和婴儿配方奶粉的开发研制提供参考。
英文摘要:
      Short-chain fatty acids(SCFAs), known as volatile fatty acids, refer to organic fatty acids with carbon chain length ranging from four to eight, are highly enriched in mammalian milk and gastrointestinal systems.The SCFAs in human diet are generally derived from cow and goat milk.SCFAs in human milk can regulate lipid metabolism and reduce the risk of obesity in infants, which play an important role in the growth and development of infants.The composition, detection methods and digestion metabolism of SCFAs in human milk were reviewed, which could provide reference for the research of nutritional value of human milk and the development of infant formula.
