| Abstract: |
| To provide a reference for the development of nutritionally enhanced foods, with β-lactoglobulin (β-LG)/linoleic acid complexes prepared under different homogenization pressures as the material, the effect of homogenization pressure on the structural characteristics of β-LG/linoleic acid complexes were studied using spectroscopic techniques. Based on preliminary experiments, response surface methodology was employed to optimize the preparation conditions of the complexes, with the molar ratio of β-LG to linoleic acid, reaction time, and homogenization pressure as independent variables, and the particle size of the complexes as the response value. The results showed that as the homogenization pressure increased from 0 MPa to 120 MPa, the intrinsic fluorescence intensity of the complexes first decreased and then increased, while the UV absorption and surface hydrophobicity first increased and then decreased. Similarly, the α-helix content initially decreased and then increased, whereas the β-sheet content showed the opposite trend. The optimal preparation conditions were determined to be a reaction time of 10 min, homogenization pressure of 80 MPa, and a β-LG to linoleic acid molar ratio of 1∶ 1, yielding a complex particle size of 210.26 nm. In conclusion, high-pressure homogenization significantly alters the structure of β-LG/linoleic acid complexes. |
