      研究了2709碱性蛋白酶水解脱脂玉米胚芽粕的最佳工艺。以脱脂玉米胚芽粕为原料,水解度为指标,在单因素试验的基础上,采用正交试验确定了脱脂玉米胚芽粕最佳水解工艺条件。得出最佳水解工艺条件为:底物浓度5%(占水的质量),加酶量5%(占底物的质量),水解温度45℃,水解pH 10.0,水解时间180 min。在此条件下,脱脂玉米胚芽粕的水解度为22.46%。
英文摘要:
      The optimal hydrolysis technology of defatted corn germ meal by Alcalase 2709 was studied. With defatted corn germ meal as raw material and degree of hydrolysis as index, the optimal hydrolysis conditions were determined by orthogonal experiment on the basis of single factor experiment. The optimal hydrolysis conditions were as follows:substrate concentration 5%(based on the mass of water), enzyme dosage 5%(based on the mass of substrate), hydrolysis temperature 45℃, hydrolysis pH 10.0 and hydrolysis time 180 min. Under these conditions, the degree of hydrolysis of defatted corn germ meal was 22.46%.
