对芝麻湿法脱皮和芝麻仁热风干燥工艺进行研究。以脱皮率、亮度和黄色值的综合评分为指标,通过单因素和正交试验,确定芝麻湿法脱皮最佳工艺条件为:碱液质量浓度0.9 g/mL,浸泡温度60℃,浸泡时间5 min,料液比1∶6。在最佳脱皮工艺条件下,芝麻仁品质的综合评分为154.51。此脱皮工艺结合热风干燥能够得到高品质的芝麻仁产品。 |

The wet dehulling of sesame and hot-air drying of sesame seed were studied. The wet dehulling conditions were optimized by single factor experiment and orthogonal experiment with composite score of dehulling rate,brightness and yellow value as indicator. The optimal wet dehulling parameters of sesame were obtained as follows:alkali mass concentration 0.9 g/mL,soaking temperature 60℃,soaking time 5 min,ratio of solid to liquid 1∶6. Under the optimal conditions,the composite score of sesame seed quality was 154.51. High quality dehulled sesame seed could be obtained by the combination of the optimal dehulling process and hot-air drying. |
