用pH 8~9的碱液处理花生原料时,花生油中黄曲霉毒素B1可从10.4 μg/kg降低到4.5 μg/kg ,效果明显,但工艺实现的难度较大。膨润土作为物理吸附剂用于脱除花生油中的黄曲霉毒素,当膨润土添加量为0.5%时,花生油中的黄曲霉毒素B1能够从12.5 μg/kg降低至1 μg/kg以内,同时可降低花生油的酸值,对过氧化值、风味无不良影响。物理吸附法通过搅拌、过滤工艺过程比较容易实现,在工业化生产中有良好的应用前景。 |

When peanut was treated by alkali solution of pH 8-9,the content of aflatoxin B1 of peanut oil could reduce from 10.4 μg/kg to 4.5 μg/kg,however,the treatment was difficult to carry out. Bentonite was used as physical adsorbent to remove aflatoxin from peanut oil,and the content of aflatoxin B1 reduced from 12.5 μg/kg to below 1 μg/kg when 0.5% of bentonite was added to peanut oil. Besides,the acid value of peanut oil reduced,and there was no negative effect on the peroxide value and the flavor of peanut oil. Physical adsorption could be easily achieved by methods of stirring and filtering,which had good application prospect in industrial production. |
