对不同富硒油茶籽的主要营养成分及富硒油茶籽油的抗氧化功能性成分和抗氧化活性指标进行了分析。结果表明:硒含量对油茶籽的营养成分及油茶籽油的抗氧化活性有一定的影响,随硒含量的增加,油茶籽的灰分、淀粉含量和蛋白质含量增加,水分含量下降;油茶籽油中的甾醇含量随硒含量的增加而升高,角鲨烯的含量先增加后减少;硒含量的增加能够显著提高油茶籽油的抗氧化活性。 |

The main nutritional components in selenium-riched oil-tea camellia seeds and antioxidant components and activity of oil-tea camellia seed oil were analyzed. The results showed that the main nutritional components in selenium-riched oil-tea camellia seeds and antioxidant activity of oil-tea camellia seed oil were influenced by the content of selenium. With the increasing of selenium content, the contents of ash, starch and protein in the oil-tea camellia seeds increased while the content of water decreased. When the content of selenium rose, the content of sterols in the oil-tea camellia seed oil became more, while the content of squalene first increased then reduced. The antioxidant activity of selenium-riched oil-tea camellia seed oil improved significantly with the increase of selenium. |
