通过测定不同配比菜籽油-氢化椰子油混合物、野山茶油-氢化椰子油混合物的熔点,确定了菜籽油-氢化椰子油、野山茶油-氢化椰子油的复配比例均为1∶1;分别以菜籽油-氢化椰子油(1∶1)、野山茶油-氢化椰子油(1∶1)、氢化椰子油为芯材,自制咖啡伴侣粉末油脂,对其理化指标、粒径分布、复原乳状液性能以及在咖啡中的应用效果与市售雀巢咖啡伴侣粉末油脂进行分析比较,发现以菜籽油-氢化椰子油(1∶1)为芯材制取的粉末油脂与市售雀巢咖啡伴侣粉未油脂较相近。 |

The combination proportions of rapeseed oil to hydrogenated coconut oil and oil-tea camellia seed oil to hydrogenated coconut oil both were determined as 1∶1 according to the melting point of the oil mixture samples with different mass ratios. The mixture of rapeseed oil and hydrogenated coconut oil (1∶1), the mixture of oil-tea camellia seed oil and hydrogenated coconut oil (1∶1) and hydrogenated coconut oil was respectively used as the core material of coffee mate oil powder. The influences of the core materials on the physicochemical indicators, particle size, property of emulsion recovery and application effect in coffee of coffee mate oil powder were researched and compared with commercial Nestle coffee mate oil powder. The results showed that the oil powder prepared by rapeseed oil and hydrogenated coconut oil (1∶1)as the core material was similar to the commercial Nestle coffee mate oil powder. |
