食用油脂在生产加工过程中由于种种原因会被矿物油污染,对食用油脂安全造成影响,因此加强检测方法研究,提高检测水平尤为重要。对食用油脂中矿物油的来源、组成及危害进行了综述,对目前食用油脂中矿物油的检测方法进行了介绍。介绍了利用物理检测法、化学检测法和色谱法对食用油脂中矿物油进行定性和定量检测的方法,以期为保证油料作物及其制品的安全性方面的研究提供一些参考。 |

Due to various reasons, edible oils and fats can be polluted by mineral oil in the production process, which affects the safety of edible oils and fats. Therefore, strengthening the study of detection method and improving the detection level are very important. Source,composition and damage of mineral oil in edible oils and fats were reviewed and the detection methods of mineral oil in edible oils and fats were introduced. The physical testing method, chemical testing method and chromatography method for qualitative and quantitative detecting mineral oil in edible oils and fats were presented so as to provide references for research on safety of oil plants and their products. |
