综述了食用油甘油三酯(TAGs)及其氧化聚合物(TGP)的分析方法。主要包括气相色谱法、高效液相色谱法、超临界流体色谱法对TAGs的分析方法,以及高效体积排阻色谱法、近红外光谱法、黏度法、介电常数法和核磁共振法对TGP的分析方法。目前TAGs的分析方法研究已取得突破性进展,而国内外对TGP的研究均是将其作为一种单体来研究,TGP的化学结构与形成机理仍不明确,因此对于TGP的进一步分离与结构鉴定,有待于深入研究。TAGs及其TGP分析方法的研究对监控食用油质量、保障食用油安全有重要意义。 |

The analysis methods for triacylglycerols (TAGs) and its oxidized polymers (TGP) in edible oil were reviewed,containing gas chromatography,high performance liquid chromatography and supercritical fluid chromatography for analysis of TAGs,as well as size-exclusion chromatography,near infrared spectrometry,viscosity,dielectric constant and nuclear magnetic resonance for analysis of TGP. Analysis methods for TAGs had already made breakthrough. However,TGP was still studied as a monomer at home and abroad,and its chemical structure and formation mechanism had not been reported yet,so it need further research on the separation and structure identification. The study had important significance for quality supervision and safety ensurance of the edible oil. |
