选用棕榈液油(OL)与棕榈硬脂(ST)部分替代猪板油,对其理化性质及相容性进行分析,并使用欧式距离法确定复配棕榈油替代猪板油配方。结果表明:棕榈油替代猪板油在理化性质、健康方面具有明显的优势;棕榈油与猪板油之间的相容性与温度和质量分数有密切的关系,整体来看,二元体系低温下易出现偏晶现象,高温下易出现共晶现象,温度越低,相容性越差,温度在35~40?℃之间时,相容性较好;通过相似度比较得出,质量分数为30%的ST和70%的OL复配时,可以作为部分替代猪板油的配方。 |

Palm olein (OL) and palm stearin (ST) were used to partial replace leaf lard, the physicochemical characteristics and compatibility of them were studied, and the formula which replaced leaf lard was confirmed by euclidean metric. The results showed that palm oil replacing leaf lard had a lot of advantages in physicochemical characteristics and health. The compatibility of palm oil with leaf lard had relationships with temperature and mass fraction, as a whole, the binary systems appeared monotectic phenomenon at low temperature, and appeared eutectic phenomenon at high temperature. The lower temperature, the worse compatibility. The compatibility was good at 35-40?℃. 30% ST blended with 70% OL could be used as formula to partial substitute leaf lard by contrasting resemblance. |
