      榛子原产于我国,是珍贵的木本粮油资源,具有广阔的发展前景。榛子仁含油率通常在60%左右,不饱和脂肪酸占总脂肪酸含量的90%左右,不饱和脂肪酸主要由油酸、亚油酸、亚麻酸等组成,具有较高的营养价值和保健功能。综述了榛子油的化学组分、提取工艺、精炼工艺和储存研究进展,以期为榛子油的进一步开发应用提供支持。
英文摘要:
      Hazelnut is originated from China,and it is a kind of valuable woody grain and oil resource,with wide development prospects.The oil content in the hazelnut kernel is approximate 60%,and the content of unsaturated fatty acids in the total fatty acids is about 90%.Unsaturated fatty acids are mainly oleic acid, linoleic acid and linolenic acid. Therefore, hazelnut oil is rich in nutrition,which is beneficial to human health. The research progress in chemical composition, extraction process, refining process and storage for hazelnut oil was reviewed in order to provide supports for its further application.
