制备了由食品级吐温80(Tw80)与聚甘油蓖麻醇酯(PGPR)稳定的水包油型复合维生素纳米乳液,对其粒径、分散度、包封率、抗氧化能力以及体外生物可给率进行了研究。结果表明:复合维生素纳米乳液的平均粒径为(84.1±3.2)nm,分散度为0.106±0.013。维生素A、维生素E的包封率分别为(93.67±1.93)%、(9405±2.18)%,具有较好的稳定性;硫代巴比妥酸反应物(TBARS)实验表明复合维生素纳米乳液具有良好的抗氧化能力;体外模拟消化实验表明,经过包裹后的复合维生素纳米乳液中维生素A的生物可给率为(87.41±2.89)%,维生素E的生物可给率为(80.63±347)%。复合维生素纳米乳液使脂溶性维生素在食品领域发挥更好的作用。 |

O/W complex vitamin nanoemulsion stabilized by food-grade Tween80 and polyglycerol polyricinoleate was prepared, and its particle size, dispersion degree index(PDI), encapsulation rate, antioxidant ability and bioavailability in vitro were studied. The results showed that the complex vitamin nanoemulsion had an average particle size of (84.1±3.2)nm and PDI of 0.106±0.013, and the encapsulation rates of vitamin A and vitamin E respectively were (93.67±1.93)% and (94.05±2.18)% with good stability, and the thiobarbituric acid (TBARS) reaction experiment indicated that the nanoemulsion had good antioxidant ability. In vitro simulation of digestion showed that in encapsulated complex vitamin nanoemulsion, the bioavailabilities of vitamin A and vitamin E reached (87.41±2.89)% and (80.63±347)% respectively. The complex vitamin nanoemulsion allowed an increased application value of lipid-soluble vitamin in food realm. |
