      采用分光光度法同时测定油脂中氢过氧化物和醛含量,对有关参数进行了研究和优化。结果表明:N,N-二甲基对苯二胺为显色剂,乙酸为催化剂,40?℃下反应40 min,用Kaiser法得出的最佳分析波长350、408 nm处可同时准确测定油脂中的氢过氧化物和丙二醛的含量;在120?℃进行氧化,并对不同氧化程度的大豆油和鳄梨油中的氢过氧化物和丙二醛含量进行测定,测定结果与标准方法对比无显著性差异。
英文摘要:
      A spectrophotometric method for simultaneous determination of hydroperoxide and aldehyde contents in oils was developed. The measurement parameters for the proposed method were studied and optimized. The results showed that the optimal experimental conditions for the colour reaction were at 40?℃ for 40 min when N,N-dimethyl-p-phenylenediamine was used as chromogenic agent and acetic acid was used as catalyst. At the wavelengths of 350 nm and 408 nm, which obtained with the Kaiser method, the contents of hydroperoxide and aldehyde produced in the oils oxidation process could be simultaneously measured. In addition, the contents of hydroperoxide and malondialdehyde of soybean oil and crocodile oil were determined when the oils were oxidized at 120?℃ for different time. Moreover, there was no significant difference between the results from both the proposed method and the standard method.
