      用碱液处理花生,检测压榨花生油中的黄曲霉毒素B1(AFB1)的含量及花生油质量指标。研究表明:碱液处理花生对脱除花生油中黄曲霉毒素B1具有良好的效果。采用碱液pH 13.40、碱液加入量10%的条件处理四级花生15 min,压榨花生油中AFB1脱除率达93.3%,采用pH 13.44、碱液加入量7.5%的条件处理三级花生25 min,压榨花生油中AFB1脱除率达98.0%。碱液处理对花生油的酸价有一定影响但在标准规定范围内,对过氧化值、碘值及脂肪酸组成无确定影响关系。
英文摘要:
      The aflatoxin B1 content and quality indexes of peanut oil pressed from peanut which was treated by alkaline solution were measured. The results indicated that the treatment of peanut with alkaline solution had a certain effect on removing aflatoxin B1 from peanut oil. Under the conditions of pH 13.40, alkaline solution dosage 10% and treatment time 15 min, the removal rate of aflatoxin B1 in peanut(grade four)oil was 93.3%. Under the conditions of pH 13.44, alkaline solution dosage 7.5% and treatment time 25 min, the removal rate of aflatoxin B1 in peanut(grade three)oil was 98.0%. Alkali solution treatment had certain influence on the acid value of peanut oil, which was within the standard range, and it had no definite influence on the peroxide value, iodine value and fatty acid composition.
