      摘要:以特丁基对苯二酚(TBHQ)为阳性对照,通过测定核桃虾青素复合油(纯核桃油+2%虾青素油)对DPPH自由基(DPPH·)、羟自由基(·OH)、超氧自由基(O-2·)清除能力和还原能力以及Fe2+螯合能力,探讨复合油的体外抗氧化活性。结果表明:核桃虾青素复合油对DPPH·、O-2·、·OH的清除能力,还原能力和Fe2+螯合能力随着核桃虾青素复合油质量浓度的增加而升高,且对DPPH·、O-2·、·OH的清除能力均强于纯核桃油,对DPPH·、O-2·、·OH的半抑制质量浓度(IC50)分别为8.25、0.81、1.30 mg/mL;还原能力方面表现为添加TBHQ的核桃油>核桃虾青素复合油>纯核桃油;核桃虾青素复合油的Fe2+螯合能力明显强于纯核桃油和添加TBHQ的核桃油。研究表明核桃虾青素复合油较纯核桃油的体外抗氧化活性有所增强。

      Abstract:The in vitro antioxidant activity of walnut astaxanthin oil blend(walnut oil +2% astaxanthin oil) was studied by determining the scavenging capacity of DPPH·, hydroxyl radical (·OH) and superoxide anion radical (O-2·), reducing capcity and Fe2+ chelating capacity of walnut astaxanthin oil blend with tert-butylhydroquinone(TBHQ) as positive control. The results showed that scavenging capacity of walnut astaxanthin oil blend on DPPH·, O-2· and ·OH, reducing capacity and Fe2+ chelating capacity increased with the increase of walnut astaxanthin oil blend mass concentration, and its scavenging capacity on DPPH·, O-2·, ·OH were superior to the pure walnut oil. The half inhibitory mass concentration of walnut astaxanthin oil blend on DPPH·, O-2·, and ·OH were 8.25, 081, 1.30 mg/mL, respectively. The reducing capacity of walnut oil+TBHQ was the strongest, followed by walnut astaxanthin oil blend and pure walnut oil. The walnut astaxanthin oil blend showed the strongest Fe2+ chelating capacity, followed by pure walnut oil and walnut oil+TBHQ. The results indicated that the antioxidant activity of walnut astaxanthin oil blend was higher than that of pure walnut oil in vitro.
