| 为了解济南市售食用植物油中单氯丙醇酯(MCPDE)和缩水甘油酯(GEs)的污染状况,采用同位素稀释-气相色谱-质谱联用法对2019—2023年济南市售食用植物油165份样品中的3-氯丙醇酯(3-MCPDE)、2-氯丙醇酯(2-MCPDE)和133份样品中的GEs含量进行测定,并对其污染水平进行分析。结果表明:济南市售食用植物油中3-MCPDE检出率为87.27%,超标率为21.82%,平均含量为1.19 mg/kg,其中菜籽油中3-MCPDE平均含量最高(2.14 mg/kg),其次是芝麻油(1.71 mg/kg),葵花籽油最低(0.75 mg/kg);2-MCPDE检出率为91.52%,平均含量为0.87 mg/kg,其中芝麻油中2-MCPDE平均含量最高(2.35 mg/kg),其次为菜籽油(1.30 mg/kg),葵花籽油(0.33 mg/kg)、大豆油(0.53 mg/kg)平均含量较低;不同种类食用植物油中3-MCPDE和2-MCPDE含量均存在显著差异,二者之间存在显著的线性正相关;济南市售食用植物油中GEs检出率为77.44%,超标率为45.86%,平均含量为1.41 mg/kg,其中芝麻油中GEs平均含量最高,为6.36 mg/kg,其次为菜籽油(2.21 mg/kg)和玉米油 (1.57 mg/kg),橄榄油最低(0.38 mg/kg);2019—2023年食用植物油中MCPDE和GEs的污染状况差异显著;2019—2023年3-MCPDE检出率总体呈下降趋势,超标率呈波动起伏趋势,2-MCPDE检出率总体变化不大;2021—2023年GEs检出率呈波动状态,2023年超标率最高;不同品牌花生油的3-MCPDE、2-MCPDE和GEs检出率没有显著差异。综上,济南市售食用植物油普遍存在MCPDE的污染,GEs超标率较高,不同种类的食用植物油污染程度不同。 |

| To investigate the contamination status of monochloropropanol esters (MCPDE) and glycidyl esters (GEs) in edible vegetable oils sold in Jinan, the contents of 3-chloropropanol ester (3-MCPDE), 2-chloropropanol ester (2-MCPDE) in 165 edible vegetable oil samples and GEs in 133 samples sold in Jinan from 2019 to 2023 were determined using isotope dilution-gas chromatography-mass spectrometry, and their contamination levels were analyzed. The results showed that the detection rate, over-standard rate, and average content of 3-MCPDE in edible vegetable oils sold in Jinan were 87.27%, 21.82% and 1.19 mg/kg, respectively. Among them, rapeseed oil had the highest average content of 3-MCPDE (2.14 mg/kg), followed by sesame oil (1.71 mg/kg), and that in sunflower seed oil was the lowest(0.75 mg/kg). The detection rate and average content of 2-MCPDE was 91.52%and 0.87 mg/kg, respectively. Among them, sesame oil had the highest average content of 2-MCPDE (2.35 mg/kg), followed by rapeseed oil (1.30 mg/kg), and those in sunflower seed oil(0.33 mg/kg) and soybean oil(0.53 mg/kg) were relatively low. There were significant differences in 3-MCPDE and 2-MCPDE contents among different types of edible vegetable oils, and there was a significant linear positive correlation between 3-MCPDE and 2-MCPDE contents. The detection rate, over-standard rate, and average content of GEs in edible vegetable oils sold in Jinan were 77.44%, 45.86% and 1.41 mg/kg, respectively. Among them, sesame oil had the highest average content of GEs (6.36 mg/kg), followed by rapeseed oil (2.21 mg/kg) and corn oil (1.57 mg/kg), and that in olive oil was the lowest(0.38 mg/kg).There was a significant difference in the contamination status of MCPDE and GEs in edible vegetable oils from 2019 to 2023. The detection rate of 3-MCPDE showed an overall decreasing trend from 2019 to 2023, while the over-standard rate fluctuated. The overall change in the detection rate of 2-MCPDE was not significant. From 2021 to 2023, the detection rate of GEs fluctuated, and the over-standard rate was the highest in 2023.There was no significant difference in the detection rate of 3-MCPDE, 2-MCPDE and GEs of different brands of peanut oil. In summary, MCPDE contamination is widespread in edible vegetable oils sold in Jinan, with a high over-standard rate of GEs, and the degree of contamination varies among different types of edible vegetable oils. |
