| 为了探究包装透光性对浓香菜籽油(FROs)品质的影响,将不同透光性包装与氮气覆盖包装的FROs在光照条件下贮藏,比较分析其对FROs色泽,叶绿素、类胡萝卜素含量及氧化指标(过氧化值、p-茴香胺值)和挥发性成分的影响,并对测定指标进行相关性分析。结果表明:墨绿色和茶棕色的聚对苯二甲酸乙二醇酯(PET)包装可显著降低蓝紫光和红橙色波段的透光率,减缓FROs色泽变化,并减缓叶绿素和类胡萝素的降解;光照贮藏期间,氮气覆盖包装FROs的过氧化值显著低于其他包装的,墨绿色和茶棕色PET包装FROs的p-茴香胺值在贮藏25 d后小于无色透明PET包装FROs和氮气覆盖包装FROs的;相比于无色透明PET包装和氮气覆盖包装,墨绿色和茶棕色PET包装FROs的挥发性氧化产物中未检测到2-丁烯醛与辛烷;FROs贮藏过程中,其总色差与叶绿素含量呈极显著负相关,与p-茴香胺值、次级氧化产物含量呈极显著正相关。综上,包装的透光性对FROs的色泽稳定性和次级氧化阶段有显著影响,油品色泽变化主要是由其中的叶绿素降解引起,并与油脂氧化程度密切相关。 |

| In order to investigate the effect of packaging light transmittance on the quality of fragrant rapeseed oils (FROs), FROs with different light transmittance packaging and nitrogen-covered packaging were stored under light conditions, and their effects on the color, chlorophyll content, carotenoid content, and oxidation indexes (peroxide value and p-anisidine value) and volatile components of FROs were comparatively analyzed, and correlation analysis was performed for the measured indexes. The results showed that dark green and tea brown polyethylene terephthalate (PET) packaging could significantly reduce the transmittance of blue-violet and red-orange bands, slow down the color change of FROs, and slow down the degradation of chlorophyll and carotenoid. During the period of light storage, the peroxide value of FROs in nitrogen-covered packaging was significantly lower than that of the other packaging, and the p-anisidine values of FROs in dark green and tea brown PET packaging were smaller than that of colorless transparent PET packaging and nitrogen-covered packaging after 25 d of storage. Compared with the colorless transparent PET packaging and nitrogen-covered packaging, 2-butenal and octane were not detected in the volatile oxidation products of the oil samples from the dark green and tea brown PET packaging. During the storage of the FROs, the total color difference showed a very significant negative correlation with the chlorophyll content, and a very significant positive correlation with the p-anisidine value and the content of secondary oxidation products. In summary, the light transmittance of the package has a significant effect on the color stability and secondary oxidation stage of FROs, and the change of oil color is mainly caused by the degradation of chlorophyll in them and is closely related to the oxidation process of oils. |
