      为提高同向双螺杆挤压机混合效果和挤出效率,更好地满足植物蛋白肉高质量生产的要求,采用理论分析和数值模拟相结合的方法,对同向双螺杆挤压机挤出植物蛋白肉的混合性能进行研究。首先理论结合实际分析得到影响双螺杆混合性能的因素,然后采用单因素试验考察了双螺杆结构参数(螺纹宽度组合、螺杆径向间隙、螺槽深度和螺杆导程组合)对建压能力与混合性能的影响,并采用正交试验对双螺杆结构参数进行优化。结果表明:最佳双螺杆结构参数组合为螺纹宽度组合W2.30 mm(螺纹1、2、3、4分别为2.30、3.30、1.60、1.50 mm)、螺杆径向间隙2.0 mm、螺槽深度5.7 mm和螺杆导程组合L32 mm(螺纹1、2、3、4分别为32、48、22、20 mm),与原模型相比,优化模型的混合系数提高了17.1%,压强差提高了10.6%。综上,双螺杆结构参数优化后,同向双螺杆挤压机具有较好的建压能力和混合性能。

      To enhance the mixing efficiency and extrusion performance of co-rotating twin-screw extruder and better meet the demands of high-quality production of plant-based meat, a combined approach of theoretical analysis and numerical simulation was employed to investigate the mixing performance of co-rotating twin-screw extruder in processing plant-based meat. Firstly, the factors affecting the mixing performance of twin-screw were obtained through theoretical and practical analysis. Then, the influence of twin-screw structural parameters (thread width, screw radial clearance, screw groove depth, and screw lead) on pressure building capacity and mixing performance was analyzed by single-factor experiment, and the structural parameters of twin-screw were optimized by orthogonal experiment. The results showed that the optimal twin-screw structural parameter combination was obtained as follows: thread width W2.30 mm (thread 1,2,3,4 of 2.30,3.30,1.60,1.50 mm), screw radial clearance 2.0 mm, screw groove depth 5.7 mm, and screw lead L32 mm (thread 1,2,3,4 of 32,48,22,20 mm). Compared to the original model, the mixing coefficient increased by 17.1%, and the pressure difference increased by 10.6%. In conclusion, after the structural optimization of twin-screw, the co-rotating twin-screw extruder has good pressure building capacity and mixing performance.
