      旨在为软枣猕猴桃加工副产物的综合利用提供理论参考,以软枣猕猴桃皮籽为原料,通过超临界CO2萃取法、超声辅助提取法和索氏提取法提取软枣猕猴桃皮籽油,分析3种方法提取油脂的理化指标、脂肪酸组成及抗氧化活性。结果表明:超临界CO2萃取法软枣猕猴桃皮籽油得率最高,为14.66%;3种方法提取的油脂的酸值和过氧化值均符合国标要求,且超临界CO2萃取法软枣猕猴桃皮籽油具有更低的酸值和过氧化值;3种方法提取的软枣猕猴桃皮籽油不饱和脂肪酸含量均在90%以上,亚麻酸含量(67.56%~69.84%)最高,其次是油酸;3种方法提取的软枣猕猴桃皮籽油均具有一定的抗氧化能力,相较另两种方法,超临界CO2萃取法所得油脂对DPPH自由基(IC50为0.23 mg/mL)、羟自由基(IC50为0.11 mg/mL)和ABTS自由基(IC50为22.07 mg/mL)的清除能力均最好,并且具有更好的铁离子还原能力。综上,超临界CO2萃取法软枣猕猴桃皮籽油理化指标及抗氧化活性均较优,综合品质最好。

      In order to provide theoretical reference for the comprehensive utilization of by-products in the processing of Actinidia arguta, using Actinidia arguta peel and seeds as raw materials, and the oil was extracted by supercritical CO2extraction, ultrasound-assisted extraction and Soxhlet extraction methods. The physicochemical parameters, fatty acid composition and antioxidant activity of the oil extracted by the three methods were analyzed. The results showed that the yield of Actinidia arguta peel-seed oil extracted by supercritical CO2 method was the highest, which was 14.66%. The acid values and peroxide values of oils obtained by the three methods met the national standard requirements, and Actinidia arguta peel-seed oil extracted by supercritical CO2 method had lower acid value and peroxide value. The unsaturated fatty acid content of Actinidia arguta peel-seed oil obtained by the three methods was above 90%, and linolenic acid content (67.56%-69.84%) was the highest, followed by oleic acid. The Actinidia arguta peel-seed oils obtained by the three methods had certain antioxidant capacity, and compared to the other two methods, the oil extracted by supercritical CO2 method had the best scavenging capacity for DPPH radicals (IC50 0.23 mg/mL), hydroxyl radicals (IC50 0.11 mg/mL), and ABTS radicals (IC50 22.07 mg/mL), as well as a better iron ion reduction ability. In conclusion, the physicochemical parameters and antioxidant activity of Actinidia arguta peel-seed oil extracted by supercritical CO2 method are superior, and its overall quality is the best.
