| 旱区特殊的生态环境造就了油料作物独特的品质特征,积累了丰富的营养物质。为进一步提升我国旱区油料功能化加工水平,提高其附加值,助力我国旱区油料加工的可持续发展,对我国旱区油料作物的概况、功能化加工技术和功能性产品开发等方面的研究进展进行综述,并对旱区油料功能化加工的进一步研究和开发提出建议。我国旱区油料作物分布广泛,种类丰富,功能独特。通过功能化加工技术可实现旱区油料资源高值化利用,其中:物理加工技术可提高热敏性成分的保留率;化学加工技术可精准调控油脂结构;生物加工技术可定向合成功能性脂质。基于加工技术的协同创新,已开发出高不饱和脂肪酸油脂、结构脂质等功能化产品,同时推动了油料加工副产物的综合利用。未来需深入挖掘旱区油料作物的潜在功能,开发高附加值、功能精准化的创新产品,同时加强对产品的安全性评估。 |

| The distinctive ecological environment of the arid areas has created unique quality characteristics of oilseed crops and accumulated rich nutrients. In order to further enhance the level of functionalized processing of oilseeds in arid areas, improve its added value, and help the sustainable development of oilseed processing in arid areas of China, the overview of oilseed crops, functionalized processing technology and product development were reviewed. In addition, the suggestions on further research and development of functionalized processing of oilseed in arid areas were put forward. The oilseed crops are widely distributed in arid areas of China, rich in variety, and unique in function. Functionalized processing technologies can enable high-value utilization of oilseed resources in arid areas: physical processing can improve the retention of heat-sensitive components, chemical processing can precisely regulate the structure of oil, and bioprocessing technology can achieve targeted synthesis of functional lipids. Based on the synergistic innovation of processing technologies, functionalized products such as high unsaturated fatty acid oils and structural lipids have been developed, and the comprehensive utilization of by-products has also been promoted. Future research should focus on exploring the potential functionalities of these oilseed crops, developing innovative products with high added value and precisely tailored functions, while strengthening safety evaluations of these products. |
