| 为开发水飞蓟籽粕成为天然抗氧化剂资源,并延长水飞蓟籽油货架期,采用超声辅助技术提取水飞蓟籽粕中黄酮类物质,以总黄酮提取率为指标,通过单因素实验和正交实验优化提取条件,并通过Rancimat法、Schaal烘箱加速氧化实验考察水飞蓟籽粕总黄酮提取物(SMSME)对水飞蓟籽油氧化稳定性(氧化诱导时间、酸值、过氧化值、货架期)的影响。结果表明:SMSME最佳提取溶剂为95%乙醇;SMSME的最佳提取条件为料液比1∶ 20、超声时间40 min、超声功率720 W,在此条件下总黄酮提取率为17.24%;当SMSME添加量为0.05%时,水飞蓟籽油的氧化诱导时间最长;SMSME抑制水飞蓟籽油氧化效果逊于α-生育酚,但优于DL-α-生育酚;在0 ℃储藏条件下,添加0.05% SMSME的水飞蓟籽油的货架期达413.4 d,高于添加合成抗氧化剂DL-α-生育酚的。综上,超声辅助技术可以有效提取水飞蓟籽粕中黄酮类物质,水飞蓟籽粕总黄酮提取物可有效抑制水飞蓟籽油在储藏期间的氧化酸败。 |

| To extend the shelf-life of Silybum marianum seed oil and develop Silybum marianum seed meal into a natural antioxidant resource, the ultrasound-assisted technology was used to extract flavonoids from Silybum marianum seed meal, and the process was optimized through single-factor and orthogonal experiments with the extraction yield of total flavonoids as an index. The effects of total flavonoids extract of Silybum marianum seed meal (SMSME) on the oxidation stability of Silybum marianum seed oil (oxidation induction time, acid value, peroxide value, shelf-life) were investigated by Rancimat method and Schaal oven accelerated oxidation experiment. The results indicated that the best extraction solvent for SMSME was 95% ethanol. The optimal conditions for ultrasound-assisted extraction of SMSME were solid-liquid ratio 1∶ 20, ultrasound power 720 W, and ultrasound time 40 min. Under these conditions, the extraction yield of total flavonoids was 17.24%. The results of oil oxidation induction time showed that the optimal addition amount of SMSME was 005%. The antioxidant effects of SMSME on Silybum marianum seed oil was lower than α-tocopherol, but better than DL-α-tocopherol. When stored at 0 ℃, the shelf-life of Silybum marianum seed oil containing 0.05% SMSME reached 413.4 d, longer than that containing the synthetic antioxidant DL-α-tocopherol. In summary, ultrasound-assisted technology can effectively extract SMSME, and the addition of SMSME effectively inhibits the oxidative rancidity of Silybum marianum seed oil during storage. |
