| n-3多不饱和脂肪酸(n-3 PUFA)是人体生长和健康不可或缺的一类脂肪酸。然而,天然甘油酯中的n-3 PUFA含量较低,限制了其利用价值。随着食品、医药、母乳脂替代和保健品等行业对高含量n-3 PUFA需求的不断增长,富集n-3 PUFA甘油酯已成为研究热点。其中,酶法富集因高效、绿色环保等优势,受到研究者的青睐。旨在为绿色高效酶法富集甘油酯型n-3 PUFA的研究与应用提供理论指导,综述了酶法富集n-3 PUFA甘油酯中脂肪酶的筛选、酶法富集技术路线和反应体系优化的研究进展。酶法富集n-3 PUFA甘油酯是一种具有广阔应用前景的方法。通过选择合适的脂肪酶、优化反应条件和反应体系、采用适当的富集方法,可以有效提高n-3 PUFA 在甘油酯中的含量。 |

| n-3 Polyunsaturated fatty acids (n-3 PUFA) are a class of fatty acids indispensable for human growth and health. However, the low content of n-3 PUFA in natural glycerides limits their utilization value. With the growing demand for high-content n-3 PUFA in industries such as food, medicine, human milk fat substitutes, and health products, the enrichment of n-3 PUFA glycerides has become a research hotspot. Among various methods, enzymatic enrichment has gained favor among researchers due to its efficiency and environmental friendliness. To provide theoretical guidance for the research and application of green and efficient enzymatic enrichment of glyceride-type n-3 PUFA, the screening of lipases, technological approaches and optimization of reaction systems in enzymatic enrichment of n-3 PUFA glycerides were reviewed. Enzymatic enrichment of n-3 PUFA glycerides is a method with broad application prospects. By selecting suitable lipases, optimizing reaction conditions and systems, and adopting appropriate enrichment methods, the content of n-3 PUFA in glycerides can be effectively enhanced. |
