| 旨在为核桃产业提供新型制油装备和技术支持,利用自主研制的新型水代制油装备制取核桃油,采用单因素实验探索配套制油工艺条件,并开展工艺实践验证。结果表明:新型水代制油装备制取核桃油的最佳工艺条件为磨浆粒度为细颗粒、加水量14%、搅拌提取温度70 ℃,在此条件下油脂平均提取率大于90%,核桃油中水分及挥发物含量为0.08%~0.17%、不溶性杂质含量为0.03%~0.05%,饼粕中水分及挥发物含量为19.39%~21.85%,残油率为6.12%~12.04%,蛋白质含量为28.31%~32.84%。综上,该装备及配套工艺可应用于核桃油的生产,具有效率高、成本低、用水量少的优势,所提取核桃油质量符合国家标准,且饼粕绿色清洁,利用价值高。 |

| Aimed at providing the walnut industry with novel oil extraction equipment and technical support, novel aqueous oil extraction equipment developed independently was used to produce walnut oil, single-factor experiments were conducted to explore the optimal oil extraction process conditions, followed by practical validation. The results indicated that the optimal oil extraction conditions were as follows: fine particle size for slurry grinding, water dosage 14%, and stirring temperature 70 ℃. Under these conditions, the average oil extraction rate exceeded 90%, with moisture and volatile content in the oil ranging from 0.08% to 0.17%, and insoluble impurities content between 0.03% and 0.05%. The moisture and volatile content in the cake ranged from 19.39% to 21.85%, with a residual oil rate of 6.12%-12.04% and a protein content of 28.31%-32.84%. In conclusion, this equipment and its supporting process can be applied in walnut oil production, and offer advantages such as high efficiency, low cost and low water consumption. The extracted oil quality complies with national standards, and the cake is green, clean, and has high utilization value. |
