| 旨在为提高油茶籽油品质提供参考,在5、6、7月分别对油茶树施加不同质量浓度(10、20、50、100、150 mg/L)的硒肥,10月采收油茶籽,分析不同硒处理对油茶籽和油茶籽油品质的影响。结果表明:硒处理后,油茶籽总硒含量提高和硒形态改变,随着硒处理浓度的增加,其总硒含量增加,有机硒(硒代胱氨酸、L-硒-甲基硒代半胱氨酸、硒代蛋氨酸)占比总体先上升后下降,并在硒质量浓度50 mg/L时达到最高,为92.87%;硒处理后,油茶籽的水分含量变化不大,含油量呈波动变化;硒处理后,油茶籽油中未检出硒,但是其酸值、过氧化值和铅含量均降低,总砷未检出,脂肪酸组成无显著变化;油茶籽油的维生素E总量在硒质量浓度20 mg/L时最高,其多酚、角鲨烯、总甾醇含量均在硒质量浓度50 mg/L时最高,均高于未进行硒处理时的,甾醇组成在硒处理前后无明显变化。综上,适当硒处理有助于提升油茶籽和油茶籽油的品质。 |

| To provide a reference for improving the quality of camellia seed oil, different mass concentrations of selenium fertilizer (10, 20, 50, 100, 150 mg/L) were applied to the camellia tree in May, June, and July, respectively. In October, the camellia seeds were harvested for processing, and the effects of different selenium treatments on the quality of camellia seeds and camellia seed oil were analyzed. The results showed that selenium treatment increased the total selenium content and changed the selenium form in camellia seeds. With the increase of mass treatment concentration, the total selenium content increased, the organic selenium (selenocystine, L-selenium-methylselenocysteine, selenomethionine) proportion first increased and then decreased, reaching a maximum of 92.87% at the selenium mass concentration of 50 mg/L. Selenium treatment had little effect on the moisture content of camellia seed, whereas the oil content fluctuated. Selenium was not detected in the oil after selenium treatment, but the acid value, peroxide value, and lead content reduced, total arsenic remained undetected, and the fatty acid composition did not change significantly. The total vitamin E content in the oil was the highest at the selenium mass concentration of 20 mg/L. The contents of polyphenol, squalene, and total sterol were all the highest at the selenium mass concentration of 50 mg/L, which were all higher than those without selenium treatment. The sterol composition did not change significantly before and after selenium treatment. In summary, appropriate selenium treatment can improve the quality of both camellia seed and camellia seed oil. |
