| 山核桃为胡桃科山核桃属植物,包括山核桃、湖南山核桃、贵州山核桃、越南山核桃和薄壳山核桃5个种。山核桃具有较高的营养价值和开发利用潜力。旨在为山核桃资源的加工利用提供科学参考,系统综述了山核桃油的主要营养成分并总结了其潜在健康效应,同时对山核桃油的应用前景及产业化发展方向进行了展望。山核桃油富含油酸、亚油酸等不饱和脂肪酸,以及生育酚、植物甾醇等生物活性成分,具有改善记忆力、调节脂质代谢、抗氧化及防癌抗癌等多重生物学功能,未来可加强对山核桃油中关键功能因子及作用机制的系统性研究。 |

| Species of Carya genus in Juglandaceae, include Carya cathayensis Sarg. , Carya hunaensis Cheng et R.H. Chang ex Chang et Lu, Carya kweichowensis Kuang A.M. Lu ex Chang et Lu, Carya tonkinensis Lecomt and Carya illinoinensis K. Koch, which have high nutritional value and development and utilization potential. In order to provide scientific reference for the processing and utilization of Carya spp. resources, the main nutritional components of Carya spp. oil were systematically reviewed, and its potential health effects were summarized. At the same time, the application prospect and industrialization development direction of Carya spp. oil were prospected. Carya spp. oil is rich in unsaturated fatty acids such as oleic acid and linoleic acid, as well as bioactive components such as tocopherol and phytosterol. It has multiple biological functions such as improving memory, regulating lipid metabolism, antioxidation and cancer prevention. In the future, systematic research on key functional components and action mechanisms of Carya spp. can be strengthened. |
