      以优化火麻油酶水解条件为目的,Mucor javanicus脂肪酶作为实验用酶对火麻油进行水解研究,在反应时间12 h、反应温度45℃条件下,通过响应面实验对反应体系的水油比、酶添加量、pH进行优化,得到反应最优条件为:水油比15∶1,酶添加量952 U/g,pH 6.62。在此条件下火麻油水解率为96.50%。

      Hemp seed oil was hydrolyzed by lipase Mucor javanicus. Based on the reaction time 12 h and reaction temperature 45℃, the ratio of water to oil, lipase dosage and pH were optimized by response surface methodology. The results indicated that the optimal reaction conditions were as follows:ratio of water to oil 15∶1, lipase dosage 952 U/g, pH 6.62. Under these conditions, the hydrolysis rate of hemp seed oil was 96.50%.
