      以复合蛋白酶为工具酶,研究采用酶解法从南极磷虾中提取油脂。采用单因素实验研究酶用量、酶解温度和酶解时间对南极磷虾油提取率的影响。在单因素实验基础上,采用响应面法进行工艺优化,得到最佳酶解条件为:中性环境,酶用量0.13%,酶解温度43.8℃,酶解时间4.9 h;在此条件下,南极磷虾油提取率为96.06%。所得南极磷虾油磷脂含量为28.7%,虾青素含量为150mg/kg,DHA含量为8.99%,EPA含量为16.90%。

      The enzymatic extraction of oil from Antarctic krill was studied with Protamex as tool enzyme.The effects of enzyme dosage,enzymolysis temperature and enzymolysis time on the extraction rate of Antarctic krill oil were studied by single factor experiment,and the enzymolysis conditions were optimized by response surface methodology as follows:pH neutral,enzyme dosage 0.13%,enzymolysis temperature 43.8〖KG-*8〗℃, enzymolysis time 4.9 h.Under the optimal conditions,the extraction rate of Antarctic krill oil was up to 96.06%. The contents of phospholipid,astaxanthin,DHA and EPA in Antarctic krill oil were 28.7%,150 mg/kg,8.99% and 16.90%,respectively.
