      结合单因素实验与响应面Box-Behnken分析法对苦杏仁脱胶油碱炼脱酸工艺条件进行优化,并利用气相-质谱联用技术(GC-MS)对脱酸前后的苦杏仁油脂肪酸组成进行分析比较,探究脱酸工艺对其脂肪酸组成的影响。结果表明:苦杏仁油碱炼脱酸的最佳条件为脱酸时间30 min、超碱量0.25%、NaOH质量分数9.5%,在该条件下苦杏仁油脱酸率达到89.42%;脱酸前后的苦杏仁油不饱和脂肪酸含量约95%,组成基本不变,说明碱炼脱酸工艺对脂肪酸组成影响不大。

      The alkali deacidification process conditions of bitter almond degumming oil were optimized by single factor experiment and response surface Box-Behnken analysis methodology, and the fatty acid composition of oils before and after deacidification were analyzed and compared by gas chromatography-mass spectrometer (GC-MS) to explore the influence of the deacidification process on fatty acid composition. The results showed that the optimal alkali deacidification process conditions of bitter almond oil were obtained as follows: deacidification time 30 min, amount of excess alkali 0.25% and mass fraction of NaOH 9.5%. Under these conditions, the deacidification rate of bitter almond oil reached 89.42%. The content of unsaturated fatty acid was about 95%, and the composition basically unchanged before and after deacidification, so the alkali deacidification process had no effect on the fatty acid composition.
