      对黄曲霉毒素含量不同(AFB1含量21.10~86.70 μg/kg,AFT含量22.76~88.25 μg/kg)、酸价(KOH)不同(5.09 mg/g和11.37 mg/g)的花生毛油分别进行碱炼脱酸,碱炼条件为理论加碱量及0.4%超量碱、碱液质量分数6.58%、碱炼温度55 ℃、碱炼时间20 min,检测碱炼前后花生油中黄曲霉毒素含量,分析碱炼对不同品质花生毛油中黄曲霉毒素的脱除效果。结果表明:碱炼可以使不同品质花生油中黄曲霉毒素的脱除率达95%以上,碱炼油中黄曲霉毒素含量降低至1 μg/kg左右,达到国标限量和欧盟限量要求;对高酸价花生毛油进行两次碱炼脱酸,可以实现对黄曲霉毒素的深度脱除,碱炼油中黄曲霉毒素未检出,同时降低了碱炼过程的油脂损耗。

      Under the alkali refining conditions of theoretical alkali amount and 0.4% excess alkali, mass fraction of alkali solution 6.58%, alkali refining temperature 55 ℃ and alkali refining time 20 min, the crude peanut oils with different aflatoxin contents(AFB1 content 21.10-86.70 μg/kg, AFT content 2276-88.25 μg/kg) and different acid value(5.09 mgKOH/g and 11.37 mgKOH/g) were refined respectively. The aflatoxin contents in peanut oil before and after alkali refining were determined, and the removal effects of aflatoxin from different quality crude peanut oils by alkali refining were analyzed. The results showed that the removal rate of aflatoxin could reach more than 95% by alkali refining, and the aflatoxin content in alkali refining oil reduced to about 1 μg/kg, reaching the requirements of national standard limit and the EU limit. Twice alkali refining deacidification of crude peanut oil with high acid value could achieve deep removal of aflatoxin, and the aflatoxin in alkali refining oil could reach undetectable level and oil loss during alkali refining was reduced.
