      对水酶法提取椰子油的工艺进行了研究,并分析了椰子油的理化指标。在单因素实验的基础上,通过正交实验优化得到水酶法提取椰子油的最佳工艺条件为料液比1∶?1、复合酶比(纤维素酶与木瓜蛋白酶质量比)1∶?1、酶解温度55?℃、加酶量0.25%、酶解时间16 h,在此条件下椰子油提取率可达83.2%。所提取的椰子油的酸价(KOH)和过氧化值分别为0.56 mg/g和0.36 mmol/kg,均优于行标NY/T 230—2006。
英文摘要:
      The extraction process of coconut oil by aqueous enzymatic method was studied and the physicochemical indexes of coconut oil were analyzed. On the basis of single factor experiment, the conditions for extracting coconut oil were optimized by orthogonal experiment as follows: ratio of material to liquid 1∶?1, ratio of complex enzyme (mass ratio of cellulose to papain)1∶?1, reaction temperature 55?℃, dosage of enzyme 0.25% and reaction time 16 h. Under these conditions, the extraction rate of coconut oil reached 83.2%. The acid value and peroxide value of the obtained coconut oil were 0.56 mgKOH/g and 0.36 mmol/kg respectively, which were better than those of industry standard requirement of NY/T 230—2006.
