以酸价、过氧化值为评价指标,研究了在20、25、40?℃条件下,对比传统常规储藏,加注99.99%~99.999%的液氮后一级大豆油品质的变化,并对其理论成本进行了分析。结果表明,一级大豆油在储藏过程中,酸价逐渐升高,过氧化值总体先升高后降低,40?℃下酸价和过氧化值变化较快。储藏温度保持在25?℃以下同时加注液氮,能很好地抑制酸价、过氧化值的升高。经理论计算,小包装车间灌装1 t一级大豆油,液氮成本为0.174元。 |

With acid value, peroxide value as the evaluation indexes, compared with the traditional and conventional storage, the quality changes of first grade soybean oil injected with 99.99%-99.999% liquid nitrogen were studied at 20, 25?℃ and 40?℃, and the theoretical cost was analyzed. The results showed that during storage, the acid value of first grade soybean oil increased, and the peroxide value increased first then decreased. The changes of acid value and peroxide value were fast at 40?℃. The increase of acid value and peroxide value could be well inhibited by injecting liquid nitrogen below 25?℃. According to the theoretical calculation, the cost of liquid nitrogen material for injecting 1 t first grade soybean oil in packaging workshop was ¥0.174. |
