介绍了生产浓香型花生油、菜籽油、芝麻油的制取工艺,对这3种油料制取的浓香油的工艺和关键设备进行点评,分析了两种滚筒炒籽机和几种榨油机的应用,对湿法和干法生产的浓香型油脂进行讨论,精炼可采取低温过滤或冬化和低温水化脱胶。指出美拉德反应提供浓香味的同时可能产生微量毒素,指出在高温下油料产生浓香味的同时,要控制油料焦糊、炭化和有毒元素,生产出优质的浓香型油脂。 |

The production processes of fragrant peanut oil, fragrant rapeseed oil and fragrant sesame oil were introduced, and the processes of these three fragrant oils and key equipment were commented. Two type of drum frying machines and some oil presses were specially analyzed, and the fragrant oils prepared by wet process and dry process were discussed. The low temperature filtration or winterization and low temperature water degumming were adopted. It was pointed that the Maillard reaction produced aroma and might produce trace toxins at the same time. The oilseeds produced fragrance at high temperature, at the same time the charing and carbonization of the oilseeds and some toxins should be controlled to produce high quality fragrant oil. |
