花生壳中水不溶性膳食纤维的响应面法优化提取

中文摘要:
      采用酸碱结合处理方法从花生壳中提取水不溶性膳食纤维,并对影响提取率的主要因素作响应面优化试验和分析.试验结果表明最优工艺参数为:颗粒大小40目,酸性洗涤剂浸提时间3 h,浸提温度70℃,花生壳与酸性洗涤剂的比例为1:25.在此条件下,水不溶性膳食纤维的提取率为75.8%.所得水不溶性膳食纤维的持水力为399.15%,膨胀力为3.20 mL/g.
