      随着社会对食品安全的关注,食用油中苯并(a)芘(B(a)P)的污染已成为世界各国关注的焦点.对食用油中B(a)P来源、限量、样品预处理及其分析检测方法进行了详尽的阐述,从食用油原料、加工等方面提出了有效的控制和脱除方法,并建议逐步调整我国食用油中B(a)P限量,使之接近或达到国际要求.
英文摘要:
      Benzo(a)pyrene(B(a)P) in edible oils has attracted broad attention in many countries with the attention to food safety.The sources,legal limits,sample pretreatment,testing method of B(a)P in edible oils were summarized.Efficient control and removal methods based on the material and processing procedure were presented.The legal limits of B(a)P in our country should be adjusted to approach international legal limits.
