      Acid value,iodine value,peroxide value,concentration of VE and total trans fatty acids as well as oxidative stability were used as the indexes to study the effect of aflatoxin detoxification by UV irradiation treatment on the quality of peanut oil.The results showed that there was no significant change of these parameters except the significant increase of the peroxide value(the peroxide value met the national standard)after the selected dose of UV irradiation treatment,which indicated that UV detoxificatio...
