Abstract:
      The fatty acid composition,triglyceride composition,solid fat content,melting point,crystallization rate,crystal form and crystal habit of reduced-calorie fats containing behenic acid were studied.The results showed that reduced-calorie fats containing behenic acid had better functional characteristic,and it did not contain trans-fatty acid,and could be used as based oil of margarine/shortening,cooking oil,frying oil and so on.
