Abstract:
      The significance of determining the composition and contents of sterols in the evaluation of olive oil was introduced.The advantages and disadvantages of the three determinations of sterols were compared.Based on the method of COI/T.20/Doc.no.10,the effects of different procedures and conditions were considered.Through the discussion and analysis,the determination method of COI/T.20/Doc.no.10 was improved to be more operable.
