The definition,classification,potential toxicity of 3-monochloropropane-1,2-diol esters(3-MCPD esters,3-MCPDE) and the form approaches of the 3-MCPDE during the processing of the edible vegetable oils,as well as the content of 3-MCPDE in current edible vegetable oils were introduced so as to promote the understanding and control for the hazards of contaminants forming in the processing of edible oils. |
