Abstract:
      The optimal hydrolysis technology of defatted corn germ meal by Alcalase 2709 was studied. With defatted corn germ meal as raw material and degree of hydrolysis as index, the optimal hydrolysis conditions were determined by orthogonal experiment on the basis of single factor experiment. The optimal hydrolysis conditions were as follows:substrate concentration 5%（based on the mass of water）, enzyme dosage 5%（based on the mass of substrate）, hydrolysis temperature 45℃, hydrolysis pH 10.0 and hydrolysis time 180 min. Under these conditions, the degree of hydrolysis of defatted corn germ meal was 22.46%.
