Abstract:
      The synthesis of sterol conjugated linoleic acid ester catalyzed by Candida rugosa lipase in n-hexane system was investigated. Based on the single factor experiment, the synthesis conditions were optimized by response surface methodology (RSM) using esterification rate of phytosterols as the evaluation index. The results indicated that the optimal synthesis conditions were as follows: molar ratio of conjugated linoleic acid to phytosterols 6∶1,reaction temperature 40℃, lipase dosage 9.6% (based on the mass of substrates)and reaction time 87 h. Under the optimal conditions, the esterification rate reached 97.5%.
