Abstract:
      Hemp seed oil was hydrolyzed by lipase Mucor javanicus. Based on the reaction time 12 h and reaction temperature 45℃, the ratio of water to oil, lipase dosage and pH were optimized by response surface methodology. The results indicated that the optimal reaction conditions were as follows：ratio of water to oil 15∶1, lipase dosage 952 U/g, pH 6.62. Under these conditions, the hydrolysis rate of hemp seed oil was 96.50%.
