Antioxidant activities of different varieties of sunflower seed oils |

Abstract: |
Sunflower seed oils were extracted from the seeds of five sunflower varieties by ultrasound method. Accelerated oxidation of sunflower seed oils were studied by Schaal oven method. The effects of accelerated oxidation on peroxide value,acid value,iodine value and contents of conjugated dienes and conjugated trienes produced by oxidation in sunflower seed oils were compared to screen sunflower variety with high antioxidant activity. The results revealed that the variation of peroxide value during the accelerated oxidation and the contents of conjugated dienes and conjugated trienes after oxidation in the oil extracted from S-31 variety were significantly lower than the other four varieties (P<0.05) and the variation of acid value of S-31 sunflower seed oil was markedly lower than that of Neikuiza 3,T526 and Baikuiza 9 sunflower seed oils,which indicated that the antioxidant activity of the S-31 variety was better than that of the other four varieties. |
