Abstract:
      The selenium enriched peanut oil was extracted from selenium enriched peanut with petroleum ether, and then selenium enriched peanut protein was extracted by alkali extraction and acid precipitation. Fatty acid composition of selenium enriched peanut oil, basic properties and amino acid composition of selenium enriched peanut protein were analyzed. The results indicated that the linoleic content of selenium enriched peanut oil was higher than oleic comparing with common peanut oil; essential amino acid content was 22.306% and nonessential amino acid content was 63.816% in selenium enriched peanut protein; the selenium contents of selenium enriched peanut and its protein were 257 μg/kg and 183 μg/kg, respectively; the relative molecular weight of selenium enriched peanut protein was in the range of 10 000-70 000 Da; selenium enriched peanut protein had better solubility,emulsification and emulsion stability.
