Abstract: |
The acidolysis of palmitic acid and oil-tea camellia seed oil catalyzed by immobilized Sn-1,3-regiospecific lipase Lipozyme RM IM in solvent-free system,and the relative content of palmitic acid at Sn-2 position in the triacylglycerol product and the law of acyl migration were studied. The effects of enzyme dosage,substrates molar ratio,enzyme water activity,reaction temperature and reaction time on acidolysis were investigated. The results showed that enzyme water activity,reaction temperature and reaction time had slight effects on the content of palmitic acid in triacylglycerol product but had strong effects on the acyl migration;under reaction conditions of enzyme water activity 0.550,reaction temperature 60℃,reaction time 1 h,the degree of acyl migration was the lowest;substrates molar ratio and enzyme dosage had slight effects on the degree of acyl migration. |
