Abstract:
      Polysaccharides in bean bregs were extracted by pH method. The bean dregs were pretreated by alcohol washing，and then the effects of ratio of liquid to material，pH，extraction temperature and extraction time on polysaccharides yield were investigated by single factor experiment and response surface methodology. The results showed that the optimal extraction conditions were as follows：ratio of liquid to material 30∶1，extraction time 2.5 h,extraction temperature 118℃ and pH 4.0. Under the optimal conditions, the polysaccharides yield was（37.88±0.12）%，which was much higher than that obtained by extraction without alcohol washing pretreatment.
