Abstract:
      The oil was extracted from blueberry seed by ultrasonic-assisted extraction. The physicochemical indexes of blueberry seed oil were determined and its fatty acid composition was analyzed by GC-MS. The results showed that the yield of blueberry seed oil was 18.42%,and the physicochemical indexes of blueberry seed oil were as follows: relative density 0.946 6, refractive index 1.464 9, acid value 3.743 mgKOH/g, saponification value 182.3 mgKOH/g, peroxide value 2.137 mmol/kg, iodine value 128.7 gI/100 g. Thirteen fatty acids of blueberry seed oil were identified, and the main fatty acids were oleic acid, linoleic acid and linolenic acid. The contents of unsaturated fatty acids and saturated fatty acids were 87.12% and 11.75%,respectively. Blueberry seed oil had high nutritional value, and it was worth developing．
