Abstract:
      The wet dehulling of sesame and hot-air drying of sesame seed were studied. The wet dehulling conditions were optimized by single factor experiment and orthogonal experiment with composite score of dehulling rate，brightness and yellow value as indicator. The optimal wet dehulling parameters of sesame were obtained as follows：alkali mass concentration 0.9 g/mL，soaking temperature 60℃，soaking time 5 min，ratio of solid to liquid 1∶6. Under the optimal conditions，the composite score of sesame seed quality was 154.51. High quality dehulled sesame seed could be obtained by the combination of the optimal dehulling process and hot-air drying.
