The sesame oil was bleached by different dosages of activated clay and activated carbon, then the contents of sesamol, sesamin, sesamolin, asarinin and vitamin E in bleached sesame oil and bleaching rate were detected to analyze the influences of different adsorbents on contents of lignans and vitamin E in sesame oil and bleaching effect, and the adsorption bleaching conditions were optimized. The results showed that in the sesame oil bleached by activated clay, the contents of sesamin and sesamolin decreased significantly (31.33% and 44.70% on average), the content of sesamol reduced slightly (25% on average), a small quantity of asarinin generated and its content increased with activated clay dosage increasing, the loss of vitamin E was great (13% on average), and the bleaching rate was high (65.15% on average);in the sesame oil bleached by activated carbon, the average contents of sesamin and sesamolin almostly unchanged comparing with that in the unbleached sesame oil, the content of sesamol decreased markedly (41.2% on average), asarinin wasn’t detected, the loss of vitamin E was minor (5.7% on average), but the bleaching rate was low(23.27% on average). Activated clay should be chosen as adsorbent with 3% of appropriate dosage so as to improve sesamol content in the bleached sesame oil and bleaching rate;while activated carbon should be chosen as adsorbent with 2% of appropriate dosage so as to improve the contents of lignans and vitamin E in the bleached sesame oil; in the adsorption bleaching process of sesame oil by activated clay, the appropriate bleaching conditions were obtained as follows:bleaching time 40 min and bleaching temperature 100℃ so as to reduce the loss of sesame lignans, while the appropriate bleaching conditions were obtained as follows:bleaching time 20-30 min and bleaching temperature 80℃ considering both the loss reduction of vitamin E and bleaching effect. |
