Abstract: |
In order to seek new ways to the resource utilization of yellow cheek carp,the oil was extracted from the viscera of yellow cheek carp by potassium hydroxide hydrolysis method and enzymatic hydrolysis method,and the physicochemical properties and DHA contents of yellow cheek carp viscera oils were analyzed and compared to determine a better method for extracting oil from yellow cheek carp viscera.The results showed that the optimal process parameters of potassium hydroxide hydrolysis method were obtained as follows:ratio of liquid to solid 1.5∶1,pH 7.5,hydrolysis temperature 70℃,hydrolysis time 50 min,potassium nitrate dosage 4% and salting time 15 min,and the extraction rate of yellow cheek carp viscera oil was 87.92% under these conditions;the optimal process parameters of enzymatic hydrolysis method were obtained as follows:ratio of liquid to solid 1.5∶1,pH 7,enzymolysis temperature 45℃,enzyme dosage 2.5% and enzymolysis time 2.5 h,and the extraction rate of yellow cheek carp viscera oil was up to 92.13% under these conditions.The contents of DHA in the oils extracted by potassium hydroxide hydrolysis method and enzymatic hydrolysis method were 24.07 mg/g and 36.38 mg/g respectively.The physicochemical properties and DHA content of yellow cheek carp viscera oil extracted by enzymatic hydrolysis method were better than that extracted by potassium hydroxide hydrolysis method,so enzymatic hydrolysis method was a better method for oil extraction from yellow cheek carp viscera. |
