Survey and analysis on catering oil quality in China |

Abstract: |
Quality indexes of one hundred and ten samples of catering oils collected from Guangdong,Shaanxi,Sichuan,Shandong,Beijing,Shanghai and Tianjin were determined and analyzed in detail.The results showed that the determined indexes of most samples of brands oils met the quality requirements of national standards;the failure rates of trans fatty acids in soybean oil,rapeseed oil and peanut oil were 26.1%,4.8% and 8%,respectively;the contents of benzopyrene in pressed oil were relatively high;the unqualified rate of aflatoxin B1 in pressed peanut oil in bulk was 13.6%,besides,many determined indexes of pressed peanut oil in bulk did not meet the requirements of national standards,so the use of the pressed peanut oil in bulk in catering industry would increase the food safety risk. |
